Trend spotting in the food and beverage industry has become a popular activity, with an ever-increasing number of experts step-ping forward to make predictions about how emerging consumer preferences will shape the future months. For manufacturers, trend-identification offers a useful signpost for future product development and marketing. But it is only one part of the story.
