Cravings at The Mirage Hotel & Resort, Las Vegas, sounds the death knell for the buffet line with its high-tech video display entry, open kitchens, resin tables and exotic woods. Expanding on lessons learned from the success of their sleek, star chef restaurants, gaming hotels are pushing the design envelope to broaden their market mix beyond casual gamblers and high rollers. They want a bigger piece of the pie, including season-spanning meetings, incentive, conference and event (MICE) business, pure leisure travel and even an FIT or two. Gaming may have been slow to come to the design table, but it now has a real appetite for change.
