Elsewhere, on the receiving dock of the hotel's 70,000-square-foot warehouse, a more serious guessing game takes place: Twice a month some $400,000 worth of wine is unloaded and inspected. Of the 1,500 bottles sold each day in the hotel's restaurants, at least a dozen will be vintages prone to being counterfeited―old Bordeaux and burgundies, rare ports. With a single bottle of 1982 Chateau Petrus worth $3,500, failure to distinguish real from fake can be costly.
