Daniel Blake

As a member of the Mormon Church, Daniel Blake took off after his freshman year to do two years of missionary service in Puerto Rico, Aruba, Bonaire and Curacao. He stayed with families who routinely threw their food scraps onto compost piles and used the decomposed waste to mulch their lush vegetable and fruit gardens. "They had avocado trees, grapefruit trees, mangoes, bananas," recalls Blake. "Everything just tasted amazing." Back in Utah, after piling his plate too high at an all-you-can-eat breakfast buffet, Blake was tossing the leftovers when he noticed the volume of uneaten food in the trash.
