While the organic foods segment will probably never be as large as the natural foods segment, organic products are mainstream-ing onto supermarket shelves at an unprecedented rate. Although organic foods currently represent less than one percent of all food sales, manufacturers may wish to regard these premium-priced products as a long-term opportunity vs a short-term niche.
