Hot breakfast is still a "hot" ticket in many B&I locations across the country but top sellers vary widely from account to account. In fact, waffles and wrap sandwiches may be popular with customers at one site, but total duds at another. Then too, operators report that tried-and-true menu "musts" in their no-frills, old-fashioned form are often unacceptable when tweaked, and any changes may lead to insurrection in the ranks. Overall, at least three things are for certain and Jorgen Petersen, a founding partner of Alexandria, VA-based Seasons Culinary Svcs. sums them up succinctly: "Breakfast is something you can't mess with too much. Try to get the standards right and not go too crazy. Plus, it's also a lot easier to convince customers to try something different at lunch than at breakfast since people tend to be more rushed in the morning."
