A perfect fit for campus

Mediterranean cuisine is a rising star among ethnic foods on North American college campuses. It is far from being as absorbed into the mainstream as Italian cuisine, and to a slightly lesser degree, Asian food, have been. But it is gaining recognition and acceptance, according to campus dining operators. Operators report that Mediterranean cuisine, which in itself encompasses foods hailing from many countries, can be a perfect fit for some menus. For one, it adds variety and contrast. And secondly, operators say, it is often just right to suit the needs of their vegetarian or vegan customers. The foodservice team at Colby College in Waterville, Maine, is tapping into a few facets of Mediterranean cuisine, serving up flavors from Greece and Italy. "We don't specifically say that on every Thursday, we're going to have Mediterranean food, but we do it incorporate it in our menus," says Varun Avasthi, Sodexho area general manager.
