It's tempting to turn to the latest technology—wheth-er that's the newest cooking equipment, POS system or digital wizardry—to boost operational efficiency. But throughput can get a much-needed lift from decidedly low-tech solutions. Sometimes all it takes is some creative editing. Fast-casual chain El Polio Loco recently trimmed its operations manual from 447 pages to 77, tightening the document into three crucial sections: operating procedures and processes; restaurant cleaning; and recipes, CEO and President Bernard Aco-ca says.
