Atherosclerosis, the major cardiovascular disease, is the main cause of mortality in the western world. Dietary fat quality as well as quantity, has been linked to total plasma cholesterol and levels of low density lipoprotein (LDL) and high density lipopro-tein (HDL) cholesterol - major risk factors in the development of atherosclerosis. Increased intake of animal fat is clearly responsible for higher risk of atherosclerosis Intake of vegetable oils on the other hand appears to lower blood lipids and reduces the risk of atherosclerosis.
