Instrumental assessment of mealiness in apples

This paper describes some of the work undertaken in a collaborative project supported by the European Commission through its FAIR Programme. The project (FAIR CT 95-0302) concentrated on defining instrumental measurements of mealiness, that is, the trend of apple tissues to disintegrate combined with a sensation of lack of juiciness and pastiness in the mouth as well as a lack of flavour.
