Cassavarootwasfermentedwithyeast,ureaanddi-ammoniumphosphate(DAP)todeterminethedegreeofconversionofcrudetotrueprotein.Acompletelyrandomizeddesign(CRD)wasusedwith6treatmentsarrangedasa2*3factorialwithfourreplications.Thetreatmentswere:rootprocessing:steamedandnotsteamed;DAP:0,1and2%ofthesubstrateDM.Thefermentationwasover14dayswithsamplestakenfordeterminationoftrueandcrudeproteinat0,3,7and14days.Thetrueproteinincassavarootincreasedwithacurvilineartrend(R2=0.99)from2.4to6.51%inDMasthefermentationtimeincreasedfromzeroto14days;theratiooftruetocrudeproteinincreasedfrom0.22to0.63overthesameperiod.IncreasingtheproportionofDAPfromzeroto2%ofthesubstrateDMincreasedthetrueproteinfrom5.57to7.29%inDMafter14daysoffermentation.Steamingthecassavarootpriortofermentationimprovedslightly(p=0.17)theconversionofcrudetotrueprotein.
