Theaimofthisstudywastodeterminetheeffectoftransportonliveweight,carcassyieldandsomevariablesrelatedtomeatqualityofmaleHolstein.Twentyeightanimalswereevaluatedandtheirliveweightatfarm(PVF)andweightatslaughter(PVL),hotcarcassweight(PCC),coldcarcassweight(PCF),pHandmeatcolorwereevaluated.Thetransportofanimalsforaperiodof8hoursandadistanceof183kmresultedinasignificantlossinliveweightofanimals(-27.6kg)equivalenttoareductionof8.4%onthearrivalweightofanimals.Thecoolingofthecarcassforaperiodof24hoursreducedtoweightin2.3%.Thislosswasassociatedwiththeoutputoffluidsduringthecooling.ThevaluesofpHandcolormeat′smatchwiththevaluesreportedintheliteratureforthisbreed.Thedurationasconditionsoftransportationwasresponsibleoflossweightandthelowqualityofmeat.
