ThisstudywasdesignedtoevaluatedifferenthoneysamplesobtainedfromlocalmarketandbeekeepersfortheirqualityparametersatGommaworedas,southwestEthiopia.Sixtysampleswerecollectedtoevaluatetheirmoisture,pH,acidity,ash,EstimationofHydroxymethylFurfural(HMF),waterinsolublesolids,totalreducingsugarandsucrosecontent.Theresultshowedlocallyproducedhoneyhadmoisture,ash,acid,andpHcontentsrangedbetween15.66to23.45%,0.05-0.60,0.30and57.30meqkg-1,3.45and4.18,respectively,whichiswithinthestandardlimits.Similarly,theHMFandreducingsugarcontentsoflocallyproducedhoneysrangedfrom0.05to17.70mgkg-1and61.15and77.41%,respectively.Thewaterinsolublematerialcontentofthehoneysamplesrangedbetween0.01and23.82gm/100gmwhilethesucrosecontentrangedbetween0.75-6.96forthetestedsamplesoflocallyproducedhoney.Theresultindicatedthatmoisturecontentofhoneyatfarmerlevelisincreasingduetoharvestingofunripenedhoneyandimproperstoragecondition,whichincreasesthehygroscopicofhoney.Generally,themeanofallsampleswerefoundtobeinacceptablerangeofinternationalstandardsforallofthetestedparametersexceptforwaterinsolublematerialindicatingitspotentialforexportwithfewmanagementinterventions.nbsp;
