The challenge for ice cream manufacturers today is two-fold. That is, how to make an indulgent product with less fat and fewer calories, while maintaining the creamy taste and texture synonymous with the popular dessert. The global obesity epidemic only highlights the need for such challenges to be met. That's why ingredients' suppliers are constantly corning up with new ideas for maintaining taste and mouthfeel, while reducing calories and, in some cases, making the product more nutritious. Rudy Wouters, application manager at Beneo-Orafti, explains: "Where once 'healthy indulgence' was seen as something of a paradox, food developers are beginning to realise the potential of this market segment. Major players within the ice cream sector, such as Walls and Unilever, have seen the potential of this relatively untapped sector and launched highly successful 'light' versions of existing favourites."
