The advent of Nancwich this month is on the minds of most cheese makers, as well as their suppliers. For example, Newtech Ltd of the UK will be exhibiting in the cheese pavilion at Nantwich on 26-27 July, providing information on its range of automated food cutting systems, including ultrasonic cutting and advising on appropriate cutting systems for various cheeses. The proSONIC machine has been designed for accurate portion control when cutting cheese. It has a radius cut ultrasonic blade, which orbits around the product, a weighscale and an option of product cen- trahsing to ensure high cut accuracy.
