Dairy companies in Japan are facing a population shift. With fewer customers as ageing consumers consume less fresh milk, there are increasing efforts to promote dairy consumption habits among children and young people. At the same time, processors are expanding the range of specialized products intended to appeal to older consumers. That being said, cheese is a bright spot, and is expected to grow in popularity in the country. At present most cheese consumed in Japan is processed from high quality imported cheeses, but this trend will gradually change as Japanese cheeses gain in popularity.
