Despite general financial restrictions across the confectionery industry, the ZDS chocolate technology symposium expanded from the already successful last event in 2008. 400 delegates gathered to hear Torben Erbraht from the German confectionery association BDSI and Dr Stephen Beckett, author, editor and formerly of the Nestle Product Technology Centre in York, open the conference along with Andreas Bertram from ZDS. One of the initial presentations gave a thorough overview of key trends in the American market. Steve Forster and Teresa Tarantino from Candy & Snack Today highlighted the trends towards mixing sweet and salty flavours, superfruits, premium products, dark chocolate and additional health benefits of chocolate and inclusions.
