According to Sue Watson, manager, Kraft Archives, Kraft Foods Group, extrusion is what enables us to produce the marshmallow we're used to today -with that springy, fluffy texture. After the product comes out of the extruding manifold, the air has been locked inside and it is 'shape-stable'. Several shapes can be created from the rope that comes out, such as cables, cylinders or pillows. First the ropes that come out of the extruder are starched before being cut by a guillotine into the correct lengths. The starch is then removed in two stages, first by a starch shaker and then by the final cleaning drum. The excess starch can be re-used. All of the starch handling components are connected to a starch vacuum system for sanitary reasons.
