The trends focused around natural colours and flavours in the confectionery industry currently include an increasing focus on clean label colour products, unusual or sophiscated flavour combinations, as well as colours still being used to support flavour profiles of products. "There is an increasing focus on clean label colour products which are minimally processed," explains Jerome Raudin, senior global marketing manager at natural colours business Chr Hansen. "In addition, there are more products being launched with new unusual flavours or sophisticated flavour combinations to attract more adult consumers.
