Dear Editor,rnI write in response to Angela Tonge's letter (CIWM Letters Page, September 2010) regarding the origin of the term "the Tottenham Pudding".rnThe London Borough of Tottenham, now part of the London Borough of Haringey, had a cleansing and transport depot in ParkView Road, Tottenham Hale. Among other activities, the depot had a waste incinerator, a kitchen waste processor and a piggery. Waste food was collected around the area and boiled in a processor.
