My lovely email from reader Gordon Lane on nb Mandakini (in Letters CB, June) set me thinking. Gordon you are quite right in what you say about obtaining decent bread on the cut but, to be honest, I would argue that almost wherever you are it can difficult to get a tasty, moist, enjoyable and satisfying loaf of bread.This the main reason why I bake as much bread as I can on board. For one thing, my loaves are a quarter of the price of shop-bought bread, they keep for ages in an air-tight wrap, taste of lovely natural flavours and don't give me 'the bloats' after just one slice! And by playing with extra ingredients of nuts, seeds and different types of flour you can really have fun experimenting and perfecting your own loaves.
