My father-in-law makes his own fantastic smoked salmon. It'ssurprisingly easy to make (well it is from our perspective. He claims it's exceedingly tricky!) and the results knock anything you buy from the shops into a cocked hat. He uses a normal, everyday kettle BBQ and something called a 'cold smoke generator' which is available online for about £30 (although I'm sure the handy among you could easily make one).We love it served simply with lemon juice and black pepper, but it was an alternative preparation that most impressed me when he delivered some of his latest batch.
