In May of this year Geraldine Randlesome, a master cake artist, had the opportunity to learn and practice some of the techniques she had studied more than 40 years ago- from the son of the man who wrote her first and most treasured pastry book. A dream indeed. I always tell people I started at the top and now working my way down. Let me explain: My career in pastry and cake decorating began in the late 1970s and early 1980s, taking as many classes as possible to learn as much as possible for this new career. While attending a two-year program one instructor suggested a few books including one by Gaston LeNotre, a very famous French pastry chef. I devoured that book, it was so amazing.
