I’m an advocate for modeling chocolate. I will scream it from the rooftops because it’s theeasiest and best form of sugarcrafting (in my opinion). It’s my best friend, the one I put mytrust in and the reason my passion for cake decorating has grown year upon year. But, justlike most relationships, we can have our differences, and the nature of modeling chocolatemeans it doesn’t always play ball. I feel bad saying it, but what I have learned is the only way todeal with it and diffuse its bad temper is allow it to chill out! Quite literally.
