The piping techniques used in this cake are just a touch more complicated than simple kisses and swirls, but still very easy to master. Meringue cookies are puffy and short on details-by nature, so you have lots of room for error on the learning curve. Bonus: Wonky misfits taste great crumbled over ice cream. Additional bonus: solid tier coverage for the cost of 8 egg whites, 2 cups of sugar, and a tiny amount of food coloring and dusts. That's a solid win in my book. I'd love to see this design pop up as an elegant smash cake or at a fancy-ish tea-party baby or bridal shower. This is very obviously inspired by spring, but imagine the possibilities simply by changing up the colors to match the season. I can't wait to see what you create with this design idea!
