In this paper, it was studied that the solubility and emulsifying capacity of the collagen protein so-lution extracted from leather wastes via the biological enzyme technology, at various pH value, collagen con-centration and electrolyte concentration. Then their changing trends were obtained.%研究了利用生物酶技术提取的制革废皮料中的胶原蛋白水溶液在不同pH值、胶原蛋白浓度、电解质浓度等条件下的溶解性能及乳化能力,获得了溶解度与乳化能力在上述条件下的变化趋势。
