银耳干品水分含量与温度、湿度及包装方法关系的研究

         

摘要

Tremella is a kind of edible fungi of very high economic value, which contains a lot of protein and sugar. If the moisture content is too high, it is easy to breed bacteria; If the moisture content is too low, the product is fragile, and the appearance and level are affected. By experiments in this paper, based on the characteristics of tremella product, the relationship between the moisture content and temperature, humidity, packing materials, desiccant dosage is demonstrated, thus to obtain the best parameters of dried tremella, and provide technical basis for tremella production, scientific research, packaging, and transport.%银耳是一种经济价值很高的食用菌,含有较多蛋白质和糖类,如果其产品水分含量太高极易回潮容易滋生细菌;如果水分含量太低,产品易碎,外观及等级都受到影响。本文根据银耳产品的特点,通过试验论证银耳水分含量与温度、湿度、包装物、干燥剂用量之间的关系,从而获得银耳干品包装的最佳参数,为银耳的生产、科研、包装、运输提供技术依据。
