陈化对含青烤烟类胡萝卜素降解产物含量及吸食品质的影响

         

摘要

研究了陈化过程中不同程度含青烤烟的类胡萝卜素降解产物含量及吸食品质的变化.结果表明:①随着陈化时间的延长,烟叶类胡萝卜降解产物含量和评吸总分呈现出先上升后下降的趋势;②中部橘黄烟叶和微带青烟叶的类胡萝卜素降解产物到达顶峰时的含量高于青黄烟叶,且到达顶峰时的时间要早;③纸箱包装烟叶的类胡萝卜素降解产物到达顶峰时的含量高于纸箱内衬塑料袋包装的烟叶,且到达顶峰时的时间要早;④陈化期间烟叶评吸总分与类胡萝卜素降解产物含量的变化规律呈现正相关性.陈化有利于含青烟叶的品质提高,采用纸箱包装优于纸箱内衬塑料袋包装.%The changes of contents of carotenoid degradation products and smoking quality of flue-cured tobacco with different greenish degrees during aging were studied. The results showed that: 1) With the progression of aging, the contents of carotenoid degradation products and total sensory scores of samples increased first, then decreased. 2) The peak contents of carotenoid degradation products in orange and slightly greenish cutters were higher and emerged earlier comparing with green-yellow cutters. 3) The peak content of carotenoid degradation products in leaves packaged in corrugated board case was higher and emerged earlier comparing with leaves in corrugated board case with plastic liner. 4) The changing trends of total sensory scores and the contents of carotenoid degradation products during aging presented a positive correlation. Aging facilitates the quality of greenish tobacco leaves, particularly the leaves packaged in a corrugated board case without plastic inner.
