The basic concept of preliminary test for the high end porcine carcass quality is introduced. The methodology and the necessity of the preliminary test for the fresh carcass and the aged carcass have been reviewed. The characteristics of veterinary sanitation test, preliminary carcass test and meat quality have been compared. Furthermore, the importance of preliminary carcass test as regard to the developing pork market has been emphasized.%文章对高端猪肉胴体质量初检的基本概念、热胴体和冷胴体初检的手段和必要性作了概述，并将胴体初检与兽医卫生检验和肉质测定之间的异同作了比较，强调了当前高端肉市场发展过程中胴体初检的重要性。
