Physiology and biochemistry including the activities of superoxide dismutase (SOD) and peroxidase (POD), and the content of soluble solids( TSS) , soluble sugar, titratable acid, vitamin C, malondialdehyde( MDA) and hydrogen peroxide( H2 O2 ) were tested to investigate the effects of the cloth ( AnsiP-s, fabric type 1-MCP relievers) on the active oxygen metabolism and stor-age quality of the postharvest Baifeng peach. The results showed that the Baifeng peach treated by the cloth exhibited higher SOD and POD activities, the content of MDA and H2 O2 was relatively low, while the content of sugar, acids, vitamin C and fruit hardness displayed a trend of decrease, compared to the control. It is concluded that this sort of cloth has postponed the fruit senescence and prolonged the fruit freshness.%通过测定'白凤'水蜜桃采后贮藏过程中超氧化物歧化酶( superoxide dismutase, SOD)、过氧化物酶( peroxidase, POD)的活性及可溶性固形物( total soluble solid, TSS)、可溶性总糖、可滴定酸、Vc、丙二醛( malondialdehyde, MDA)、过氧化氢( hydrogen peroxide, H2 O2 )含量等生理生化的变化,探讨1-MCP对采后水蜜桃果实活性氧代谢及贮藏品质的影响. 结果表明,经1-MCP处理的水蜜桃果实维持较高SOD、POD活性, MDA、H2 O2 含量相对降低,可溶性总糖、可滴定酸和Vc含量及果实硬度呈降低趋势,但变化相对缓慢. 1-MCP处理可以延缓果实衰老,延长果实保鲜期.
