林下草地养殖模式下清远麻鸡和贵妃鸡肉质的对比研究

摘要

Under the same conditions of grassland farming,30 Qingyuan partridge chickens and 30 princess chickens were randomly selected;their chest muscles were taken as slices to measure their physical properties,main chemical composition,muscle histological features and comparative study.Result shows that the muscle performance of prin-cess chickens is optimal than that of the Qingyuan partridge chickens;from the color,the holding water rate ,mus-cle and fat and other data comprehensive analysis,the meat quality of princess chicken is optimal than that of Qingyuan partridge chickens.%在相同草地养殖条件下，随机选取清远麻鸡和贵妃鸡各30只，分别取其胸肌做成切片，测定各自的物理性状、主要化学成分、肌肉组织学特性，并进行对比研究。结果显示：贵妃鸡的肌肉性能比清远麻鸡更佳；从色度、系水力、肌肉脂肪等数据综合分析可知，贵妃鸡的肉质比清远麻鸡更好。
