浙江光叶柿果实营养成分研究

         

摘要

Determinations were conducted on morphological traits, soluble solids and protein content from 14 plus tress of Diospyros zhejiangensis, a native variety in Yongkang, Zhejiang province. Analysis were on organic nutrition and mineral elements in processed fruits. The results showed that the mean single fruit weight was 27.3 g, the soluble solids and protein content in fresh fruit were 27% and 0.2678%. Contents of soluble suger, total carbon, crude fiber, crude protein and crude fat in processed fruit were similar among the 14 plus trees, while the contents of vitamin C and tannin were different significantly. The plus tree of No 19 had the highest content of soluble suger and vitamin C, and lower content of tannin. The mineral elements, such as Cu、 2n、Ca、 Fe、 Na、 Mn、K, were also found in processed fruit of D. Zhejiangensis.%以永康市农家品种浙江光叶柿(Diospyros zhejiangensis)的14个优株果实为研究材料,观察和测定了鲜果外观性状、可溶性固形物和蛋白质含量,测定分析了加工果主要有机营养和矿质营养成分.结果表明,浙江光叶柿果实平均单果重27.3 g,可溶性固形物和蛋白质含量分别为27%和0.267 8%;经加工后,各优株果实的可溶性糖、全碳、粗纤维、粗蛋白、粗脂肪含量差异不明显,而单宁含量和维生素C含量差异较大,其中19号优株可溶性糖和维生素C含量最高,而单宁含量较低;果实中含有Cu、Zn、Ca、Fe、Na、Mn、K等人体所必需的微量矿质元素.
