To evaluate the safety and provide basis for comprehensive development and utilization of the powder of astraga-lus residues fermented by Cordyceps,the antimicrobial effects of extracts and the contents of heavy metals and microbe in this power were measured. The antimicrobial ability of the extract is:Salmonella spp(G–)>Staphylococcus aureus(G+)>Bacillus subtilis(G+)>Escherichia coli(G–).As to the fungi,the best effect of antimicrobial is on Aspergillus spp. and Penicillium spp.,while its effect on Rhizopus spp. and Mucor spp. is not obvious. The testing results of heavy metals and microbe show that the lead content is 0.795,4,mg/kg,mercury 0.019,0,mg/kg,and arsenic 0.636,4,mg/kg. In the microbi-ological analysis,the total counts of mesophilic aerobic bacteria(TMAB)is 140,g–1,the counts of Coliform group is fewer than 30,a/100,g,the counts of fungus is 0,g–1,and salmonella are not found.%为了评价黄芪渣虫草发酵粉的抑菌活性和安全性,以及为其综合开发提供科学依据,对黄芪渣虫草发酵粉粗提物的抑菌活性进行了研究,并对其发酵粉中重金属及其污染微生物进行了测定.抑菌实验结果表明,黄芪渣虫草发酵粉对常见的4种细菌的抑制作用大小依次为沙门氏菌(G–)>金黄色葡萄球菌(G+)>枯草芽孢杆菌(G+)>大肠杆菌(G–),而对真菌抑菌效果最好的是曲霉和青霉,对根霉和毛霉无明显抑制作用.重金属定量检测,铅的含量为0.795,4,mg/kg,汞的含量为0.019,0,mg/kg,砷的含量为0.636,4,mg/kg.在微生物分析中,根据国家标准规定的方法,培养测得菌落总数为140,g–1,大肠菌群数少于30个/100,g,霉菌数为0,g–1,沙门氏菌未检出.
