晋中晚熟冬麦区小麦品种籽粒蛋白质积累特性差异研究

         

摘要

采用大田试验方法,以5个不同小麦品种为材料,研究了晋中晚熟冬麦区不同小麦品种籽粒蛋白质积累特性的差异.结果表明,不同小麦品种籽粒蛋白质及其组分含量存在差异;不同小麦品种籽粒蛋白质含量动态变化趋势基本一致,均呈现“高-低-高”的“V”型变化特征,花后15d最低;不同小麦品种籽粒蛋白质组分含量的积累规律亦一致,在籽粒灌浆始期小麦籽粒清蛋白的含量较高,随籽粒发育成熟逐渐下降;籽粒球蛋白含量在整个籽粒发育成熟过程中始终最低,花后15 d达到最低,而后有所回升;籽粒醇溶蛋白和谷蛋白含量皆随籽粒发育成熟逐渐升高.研究旨在明确晋中晚熟冬麦区冬小麦籽粒蛋白质形成差异的生理机制,为小麦优质高产栽培提供理论依据.%In this paper, differences of wheat protein accumulation were studied within 5 varieties of late-maturing winter wheat planted in Jinzhong. The results showed that there were differences in grain protein contents and component between varieties and the dynamic changes of grain protein level had the same trend of high-low-high V-type, and 15 days after anthesis the grain protein content of varieties was the lowest; the accumulation rules of grain protein components were similar within 5 varieties. Namely, during the beginning of grain filling period the content of wheat grain albumin were higher than in other periods and as the grain turned mature, its content decreased gradually. The content of grain globulin was always in minimum during whole period of grain maturation. It dropped to the lowest in 15 days after anthesis and later rose again. The content of gliadin and glutenin were gradually increased with the maturation of grain. The aim of present study was to indicate physiological mechanism of the differences of those winter wheat varieties in Jinzhong, to provide theoretical basis for fine quality and high yield wheat prodoction.
