枣树不同品种、发育时期和器官的水溶性多糖含量研究

             

摘要

以24个枣品种为试材,用苯酚-硫酸法测定分析了鲜枣白熟、脆熟和完熟3个发育时期的果肉、果皮、叶片和吊梗4个器官的水溶性多糖含量,并利用SAS软件对所测定的数据进行分析处理.结果显示,(1)水溶性多糖含量在枣的不同器官间存在极显著差异,综合24个品种在不同发育时期的水溶性多糖含量的平均值,果肉中含量最高,平均为124.06 mg/g,吊梗中含量最低,平均为8.63 mg/g.(2)对比24个品种水溶性多糖含量在不同发育时期的平均值,完熟期枣果实中水溶性多糖含量最高,平均为66.21 mg/g;白熟期含量最低,平均为48.78 mg/g.(3)水溶性多糖含量在测试的24个枣品种间存在显著差异,太谷壶瓶枣果实水溶性多糖含量最高,达134.17 mg/g;南京鸭枣最低,为69.53 mg/g.(4)随着枣果成熟度的提高,枣果肉、果皮、叶片等部位的水溶性多糖含量呈上升趋势,至完熟期达到最高,且完熟期果肉的水溶性多糖含量极显著高于其他发育时期和器官.(5)相同品种的水溶性多糖含量在不同地域间的差异很小;而不同年度间的差异较大,但不同年度的水溶性多糖在品种及发育时期间的含量变化规律基本一致.%In this research 24 quality jujube cultivars were studied, and polysaccharides content in flesh, fruit skin, leaves and stems at white-maturing, crisp-maturing and complete-maturing periods were determined by phenol-sulfuric acid method and were analyzed by SAS. The result showed five important points. Firstly, there's an extremely distinct difference for the polysaccharides content in different organs. According to the average of polysaccharides content at different growing periods of the 24 cultivars, the highest value is in the flesh, averaging 124.06 mg/g, while the lowest in the stem, averaging 8.63 mg/g. Secondly, according to the average polysaccharides content in different organs for the 24 cultivars, the highest value occurs at the complete-maturing period, averaging 66.21 mg/g, while the lowest at the white-maturing period, averaging 48.78 mg/g. Thirdly, there's a distinct difference for the polysaccharides content among cultivars. The highest content is in the Taiguhupingzao jujube which reaches 134.17 mg/g, while the lowest in Nanjingyazao jujube, only 69.53 mg/g. Forthly, with increasing maturity of the fruit, the polysac-charides content in flesh, fruit skin and leaves also goes up, and reaches the highest value at complete-maturing period. The content in complete-maturing flesh is distinctly higher than that at other growing periods and organs. Lastly, there's a small difference for polysaccharides content of the same cultivar in different regions, while the difference is rather large in different years. Yet the content change in different cultivars and different growing periods has the same rule in different years.
