In this study,the samples were extracted by water ultrasonic and then centrifugally separated,after that,Br-was removed from the extracting solution by a Ag/H column and the content of BrO3-was determined with ICP-MS method.The content of bromate and bromide was detected in the extracting solution by HPLC-ICP-MS,in order to verify the reliability of the ICP-MS method to determine the bromide and bromate.The results show that this method is simple,fast,highly sensitive and less interference,and the detection limit reached 0.05 mg/kg.The result can truly reflect the content of bromate in the food on the market.Compared with the traditional ion chromatography,it is not only faster,but also free from false positive.The level of total contents of bromate and bromide in flour,noodle and rice on the market was reported for the first time.These data have the important significance for the regulation of bromate and bromide pollution in food.%将样品用水超声提取后离心分离,提取液经Ag/H柱除去Br-,通过ICP-MS测定了食品中溴酸盐的含量,同时用HPLC-ICP-MS检测提取液中溴酸盐和溴化物的含量,验证ICP-MS法测定溴化物及溴酸盐方法的可靠性.结果表明:该方法快速、简便、灵敏度高、干扰少,检测限达到0.05 mg/kg,能够真实反应市场上食品中溴酸盐的含量,相比传统的离子色谱法,不仅速度快,且无假阳性的问题.同时首次报道了市场上小麦粉、面条和大米中的总溴、BrO3-和Br-的含量水平,对食品中溴酸盐及溴污染的监管具有重要意义.
