红蓝草红色素稳定性的研究

     

摘要

[Objective] The stability of Peristrophe roxburghiana red pigments were discussed. [ Method]Taking ethanol as solvent, the red pigments were extracted from P. roxburghiana by using ultrasonic assisted extraction method, the stability of the pigments at various pH, temperature, light, oxidants, reducing agents, food additives and various metal ions conditions were detected. [Result] The pigments were soluble easily in water and ethanol; medium orange-red emerged in less than 11 of pH value, more stably in performance;yellow green appeared when the pH value was greater than 12,performance of red pigments was instability; the pigments were stable to heat and light;oxidant make pigments color fading;food additive sucrose,such as citric acid, potassium sorbate had little influence on the pigments, and ascorbic acid make pigment color fading; K+ , Na+ , Cu2+ ,Mg2 + ,Zn2+ ,Ca2 + on the pigments had no negative effects, while added Fe3+ ,Al3+ , the phenomenon appeared dim reddish, Fe + ,Al3+ had a certain impact on the stability of pigments. [Conclusion] P. roxburghiana red pigment were a kind of stable drug-edible material which can be worthy of further research and utilization.%[目的]探讨红蓝草红色素的稳定性.[方法]以乙醇为溶剂,采用超声波辅助从红蓝草中提取红色素,并对该色素在不同pH、温度、光照、氧化剂、还原剂、食品添加剂和不同金属离子条件下的稳定性进行检测.[结果]红蓝草红色素易溶于水和乙醇;在pH值小于11的介质中显橙红色,性能较稳定;当pH值大于12时显黄绿色,红色素性能不稳定;红色素耐热性好,耐光性好;氧化剂使红色素褪色;食品添加剂蔗糖、柠檬酸、山梨酸钾对红色素性能影响不大,而维生素C使红色素褪色;K+、Na+、Cu2+、Mg2+、Zn2+、Ca2+对红色素无不良影响,而加入Fe3+、Al3+时,出现了偏暗偏红现象,Fe3+、A13+对红色素稳定性有一定的影响.[结论]红蓝草红色素是一种较稳定的药食兼用色素源,可进一步开发利用.
