[ Objective ] To obtain the optimum method to remove protein form polysaccharide of Armillariella tabescens. [ Method ] Protein was removed from the polysaccharides of Armillariella tabescens respectively by Sevag method, enzyme method, trichloroacetic acid (TCA)method,and the combined method of enzyme and Sevag, and the best protein removal method was selected. [ Result ] The combined method of enzyme and Sevag was better than others with the contents of protein of only 0.18%; the optimum conditions needed for this method were: 0.5% of enzyme, 40 ℃, 0.5 h bath and pH 6. [ Conclusion] The combined method of enzyme and Sevag was the best method for protein removal.%[目的]得到最佳的去除亮菌菌索糖复合物蛋白的方法.[方法]分别用Sevag法、酶法、三氯乙酸脱法、酶法与Sevag法结合法去除亮菌菌索糖复合物蛋白,筛选最佳脱蛋白方法.[结果]酶法与Sevag法结合脱蛋白的效果好,这时蛋白质含量仅为0.18%;酶法的最佳的条件:酶用量为0.5%,温度为40 ℃,水浴时间为0.5 h,pH为6.[结论]酶法与Sevag法结合法是较好的脱蛋白法.
