采用常规营养物质测定方法对平均体长7．2 cm血鹦鹉（Cichlasoma synspilum × C ．citrine）肌肉营养成分含量进行了测定。结果表明，血鹦鹉鱼新鲜肌肉中粗蛋白含量16．9％，粗脂肪含量1．94％，水分含量74．9％。以上三种营养成分均低于比较的10种常见鱼类。钙含量1．06％，总磷含量1．15％，氨基酸种类共检测出17种，氨基酸总和14．59％，谷氨酸含量最高为2．763％，半胱氨酸含量最低，仅为0．134％，其中9种鱼类必需氨基酸含量为46．784％，根据AAS、CS评分，血鹦鹉的限制性氨基酸为缬氨酸、异亮氨酸、蛋氨酸＋半胱氨酸。%This study was conducted to determine the muscle ingredients of blood parrot (Cichlasoma syn‐spilum × C .citrine) which have an average body length of 7 .2 cm using Determination of conventional nutri‐ents .Results indicate that the crude protein in fresh muscle of the blood parrot was at a low level of 16 .9%which was only higher than two of the 10 kinds of common edible fish ;a medium level in crude fat content of 1 .94% ;moisture content of 74 .9% which was lower than 10 kinds of edible fish ;calcium content of 1 .06%and phosphorus content of 1 .15% both of which were higher than 10 kinds of edible fish ;17 kinds of amino acids were detected and the total amino acids was 14 .59% which was lower than that of the Yellow River carp and the Pearl Arowana ,9 out of 17 have a essential amino acid content of 46 .784% which was also low than that of the Yellow River carp and the Pearl Arowana ;nowadays ,although perch and carp were usually expec‐ted to be the feedstuff for the blood parrot during the production ,the content and ratio of protein ,fat ,calci‐um and phosphorus ,amino acids and other nutrients of blood parrot still has a huge difference compared with other edible fish such as perch and carp .
