促生因子对复合益生菌发酵牛骨粉钙转化率的影响

         

摘要

为探讨复合益生菌转变结合态骨钙为游离态的可行性,同时为开发含有益生菌的生物态补钙制剂提供理论依据和技术支持,以牛骨为天然钙源,采用微生物发酵工程技术,选用嗜酸乳杆菌与鼠李糖乳杆菌复合益生菌进行了协同发酵牛骨粉的钙转化率试验,并在此基础上运用响应面分析法对复合益生菌促生因子进行优化.结果表明:对钙转化率的影响为糖类>氨基酸>维生素,其最优组合为低聚异麦芽糖:葡萄糖为4.52:1,维生素B2:烟酸为1.94:1,精氨酸:蛋氨酸为1.06:1,接种量3%,37℃、100 r/min振荡培养69.96 h,在此条件下钙转化率达45.02%.%The effect of growth-promoting factors on the calcium conversion rate of bovine bone powder fermented by composite probiotics of Lactobacillus acidophilus and Lactobacillus rhamnosus was studied and the condition of growth-promoting factors was optimized by response surface analysis to discuss the feasibility of free-state calcium converted from bound calcium and to provide the theoretical basis and technical support for developing biostate calcium supplement preparation containing probiotics. The results showed that the factors affecting calcium conversion "rate were sugars>amino acids> vitamins and the calcium conversion rate under the optimum conditions of 4. 52 : 1 of isomaltose∶glucose, 1. 94∶1 of vitamin B2 : nicotinic acid, 1. 06∶1 of arginine : methionine, 3% inoculation amount, 100r/min, 37℃ for 69. 96 h could reach 45.02%.
