超市散装食品卫生状况检测及其原因分析

             

摘要

为了了解超市散装食品的微生物卫生状况,探讨超市散装食品的微生物污染源及其控制方法.按照GB4789.2-2010;SN 0169-92;SN 0170-92;SN 0172-92;GB 4789.15-2010;GB/T 4789.16-2008标准要求进行微生物卫生指标检测.结果表明,超市散装食品四大类32份样品中检样总体合格率为2.5%,其中蜜饯食品、熟肉制品、糕点制品、烤鱼片检样合格率分别为28.6%、14.3%、50%、1.7%.从检测结果来看,细菌总数检样总合格率为65.63%;大肠菌群检样总合格率为90.6%;致病菌检样合格率为65.6%.超市散装食品微生物污染较严重,存在较大的食品安全隐患,应该加强监测、规范和控制.%To realize the situation of microbiological contamination of bulk foodstuff in the supermarket, the microbiological contamination pollution sources and control method were investigated. Microbiological contamination were determined with GB 4789.2-2010, SN 0169-92, SN 0170-92, SN 0172-92.GB 4789.15 -2010,GB/T 4789.16-2008 required. In the total 32 samples, the total percent of pass was 2.5% .The percent of pass of confect food, cooked meat product, cake product and Roast fish fillet was 28.6% ,14.3% ^50%x 1.7% respectively. The eligible rate of standard plate count (cfu) was 65.63%; the eligible rate of coli forming of MPN was 90.6%; the eligible rate of pathogenic bacteria was 65.6%. The degree of microbial contamination on bulk foodstuff sale in the supermarket was particularly serious. There were potential food safety hazards. It was suggested to reinforce manager and control.
