苹果采后产业现状及发展策略研究

摘要

China is a predominent apple production country, which occupied 48% of the world production and 16% of civil fruit productionrespectively. Based on the current situation of apple industry in China, three aspects including postharvest status, existing problems and the development strategy were considered in this paper. The challenges on fresh apple storage, juice processing, and pomace utilization were also analyzed. Aimed on the problems above all, the authors introduced series of scientific and technological achievements, andproposed some thoughts for the apple postharvest industry.%我国是苹果生产大国，产量占世界苹果产量的48%，占我国水果总产量的16%。本报告基于我国苹果产业现状，重点从苹果采后产业现状、存在问题及发展策略三个方面展开，分析了我国鲜销苹果贮藏、苹果汁加工及皮渣综合利用等方面存在的主要问题，介绍了针对上述问题已经取得的系列科技进展，并提出了苹果采后产业的发展建议。
