摘要

With the rapid development of national improvement of living standards and as the pace of modern life continues to increase, the demand for milk, dairy products also keeps increasing. With the safety requirements of milk and milk products is put in the ifrst place, there has much more attention on the hormone of milk and dairy products, especialy the estrogen. In this paper, the source and damage of estrogen, milk and dairy products content, and the nationalcontrol criterion of estrogen were analysed.%随着生活水平的不断提高、生活节奏的不断加快,人们对牛奶、乳制品的需求也在增加,随之而来的是将乳及乳制品的安全性要求放在了首位,对乳与乳制品中激素问题也越来越关注,特别是雌激素。本文对乳与乳制品中雌激素的来源、危害、含量、检测、国家控制等方面进行了分析。
