Carrageen is a lyophilic colloid extracted from red algae of sea-plant. Due to its high water retention, carrageen is frequently used in pre-slaughtering pigs to increase the body water concentration, resulting in "glue injection meat". The illegal use of carrageenan in pig slaughtering and its harm to human health were analyzed in this paper. Moreover, advances in research of detection techniques for carrageenan was reviewed, including near infrared spectroscopy, fluorescence spectroscopy, low field nuclear magnetic resonance technology, and the combination of methylation and reversed phase high performance liquid chromatography technology.%卡拉胶是一种提取自红藻类海草的亲水性胶体,具有强大的保水性,被用于生猪屠宰前使用,以增加机体含水量形成"注胶肉".本文分析了卡拉胶在生猪屠宰过程中的违法使用及其危害,综述了近红外光谱法、荧光光谱法、低场核磁共振技术等检测注胶后肉品中卡拉胶成分的技术进展.
