摘要

综述了牛乳脂的组成、脂肪酸组成及特点、甘油三酯结构及组成、含有的极性脂质等,以期为牛乳脂的深入研究和应用提供科学依据.%The composition of bovine milk fat, fatty acid composition and characteristics, structure and composition of triglycerides, polar lipids were reviewed, in order to provide a scientific basis for further research and application of bovinemilk fat.
