大豆异黄酮是大豆生长过程中形成的一类次级代谢产物,具有弱雌激素活性、抗氧化活性、抗溶血活性和抗真菌活性,能有效地预防和治疗癌症、骨质疏松、妇女更年期综合征等多种疾病。本文综述了大豆异黄酮的结构、性质及其提取、分离与分析检测方法的研究进展,拟为今后大豆异黄酮的综合利用及其衍生产品的开发提供参考。%Soybean isoflavones, a kind of secondary metabolites formed in soybean growth, with weak estrogenic activity and antioxidant, anti-hemolytic and antifungal activities, can effectively prevent or treat many diseases such as cancer, osteoporosis and women’s menopause syndrome. A review was made on the research progresses in the structure, property, extraction, separation, analysis and detection of soybean isoflavones for providing some references for the comprehensive utilization of soybean isoflavones and the development of their derivatives.
