为改善再造烟叶产品外观,开展了栀子果提取物在再造烟叶产品中的应用研究,选取了云南、江西、福建三地的栀子果,按传统烟用香料加工方法制得提取物,通过栀子提取物在不同温度、pH环境中吸光度的变化判断其稳定性;使用色差仪定量比较改变再造烟叶外观色泽强弱及存放色泽稳定性;并对添加了栀子提取物的再造烟叶样品进行感官评吸.结果表明:栀子提取物适应再造烟叶生产加工条件涂布温度和pH,改善外观色泽效果明显,添加栀子提取物的再造烟叶样品在密封避光条件下能够长期存放不变色;在评吸效果方面,栀子果提取物具有细柔、丰富烟气及改善余味的功效,但略有杂气、刺激性;各地栀子果提取物总体使用效果差异不大,云南栀子果提取物稍好于江西、福建栀子果提取物,这为栀子果提取物在再造烟叶中的应用提供了参考.%In order to improve the appearance of reconstituted tobacco products,we carried out the applied research of gardenia fruit extract in reconstituted tobacco products.The gardenia fruits from Yunnan,Jiangxi and Fujian provinces were selected,and their extracts were obtained by traditional tobacco perfume extraction method.The stability of gardenia fruit extracts was determined by the absorbency variation under different temperature and different pH conditions.The appearance color intensity and stability of various reconstituted tobacco leaves were quantitatively compared by using colorimeter,and the sensory smoking quality of the reconstituted tobacco samples supplemented with gardenia fruit extract was evaluated.The results indicated that the gardenia fruit extract adapted to the coating temperature and pH conditions for the production of reconstituted tobacco,and could obviously improve the appearance color of reconstituted tobacco.Under the sealed and dark conditions,the reconstituted tobacco samples supplemented with gardenia fruit extract could keep their appearance color in long-term storage.As for the sensory smoking quality,gardenia fruit extract could make smoke more elegant and richer,and also could improve the aftertaste,but it had slight offensive odor and irritation.There was little difference in applied effect among the gardenia fruit extracts from three provinces,and the gardenia fruit extract from Yunnan province was slightly better than that from the others.
