摘要

The orthogonal design was applied to the stability conditions optimization of ternary complex pectin/protein/phenols with the turbidity retention rate of simulation system as the index in this paper. The optimal conditions of suspension stability were that, pectin concentration 900mg.l~', gliadin concentration 300mg.l-1, pH=3.9, reaction temperature 15°C. The result shows that the orthogonal design is simple, rapid and efficient to get the optimal conditions of suspension stability.
