Our present work deals with activity measurement of bruised and fresh regions of Sapodilla fruits caused by different impact energies using bio-speckle technique. Two algorithms Inertia Moment (IM) and Fujii have been used for this purpose. Artificial bruises have been created by using steel balls of different masses and their corresponding impact energies have been calculated. IM values show that activity decreases with increase of day and activity of bruised region is less than that of fresh region. Spectral maps obtained by Fujii show that activity decreases with increase of day as well as impact energy.
