The extraction of dissoluble protein from antlers using high intensity pulsed electric fields (PEF) was investigated, and then, the extract was preliminary separated by ultrafiltration, and tested the antioxidant activity of each part. The effect of extraction rate of protein among different ratio of material and water, field strength, pulse number and times ware investigated in this text. And optimize the test by ternary quadratic regression rotation combination design, the optimum condition was determined as: ratio of material and waterl:12, field strength27.03kV/cm, pulse numberl2,times 2. Under such condition the maximal rate of extraction of dissoluble protein is 27.32%. The three parts of proteins by ultrafiltrated had been confirmed with DPPH, superoxide anion radical scavenging ability.
